Thelmas Original Welsh Caerffili
A Welsh Classic, crafted to perfection. As traditional Today as when it was made by Carwyn's Great Great Grandmothers Lizzie Wyn and Leisa Jones. Our fresh creamy Caerffili curds are aged for up to 6 weeks in 3kg rounds and are allowed to grow natural moulds on the rind . The texture is loose and slightly crumbly with a flavour that is delicate on the palate but moreish enough for you to reach out for more. Aged for a minimum of 4 weeks.
Smoked here on Glyneithinog Farm. The lightness of the smoking adds a contrasting flavour to the clean freshness of the Caerffili . Works surprisingly well and gives and earthy dimension to the flavour.
Garlic & Herb Caerffili
Garlic and mixed herbs are added to our fresh Caerffili producing a cheese with a subtle savoury taste over the creamy fresh flavour of the Caerffili.
Develops a distinctive mushroomy and cabbagy flavour as it softens and matures with a stronger aroma than our Perl Wen.
